Fine English Cuisine - Toad-in-the-hole Recipe with Sausages and Yorkshire Pudding!

This is real stick-to-your-ribs filling comfort food, cheap and cheerful! I think part of the original charm was it was inexpensive to make and as well as being so tasty and filling.

Yorkshire pudding was originally served at the beginning of the meal to fill the stomach so a smaller less expensive portion of meat would satisfy. Yorkshire puddings alone made in muffin or bun tins can be served as a dessert with syrup. Traditionally in our East Yorkshire family it was always with Tate and Lyles Golden Cane Syrup.

All of these are wonderful served on a cold rainy night with the wind howling around the house!

• 1 cup milk
• 1 cup flour
• 1 cup eggs
• Pinch of salt
• 1/2 to 1 pound of breakfast sausages or bangers

1. Mix above ingredients in a bowl. Put milk in first to avoid lumps.
2. Preheat oven to 425 Fahrenheit
3. Put pricked sausages in a Pyrex dish and bake till almost cooked.
4. Add 2 tablespoons of lard, tenderflake or crisco and put back in oven
5. When fat is hot, pour in yorkshire pudding mixture
6. Cook for approx 35-40 minute when everything is completely brown and risen.
7. Best served with mashed potatoes and Bisto gravy!

The above Recipe gives a moist and filling Yorkshire pudding that rises well, but you can cut down on the egg for a harder drier pudding. We were using a recipe with less eggs, but this one given to us by our chef friend is foolproof. The free-range eggs give a yellow tint too! The pudding may sink a little as it comes out of the oven like a souffle because of the higher ratio of eggs.

The fat should be smoking hot with no chance to cool down as you pour the batter in. Have everything ready and right by the stove and if you can leave the tray in the stove and pour the batter in without burning yourself that is best.

You will know when the Yorkshire puddings are done when they are golden and crispy around the edges. If really unsure you can put a cocktail stick in and it should come out clean like for a cooked a cake. Don't open the oven door until you are certain, because as same as a cake, the pudding will fall if cool air gets on it before the outside cooks.
